I've been enjoying my time on the east coast. After years of being thousands of miles away, we can now hop in the car and drive only a couple of hours to visit friends and family. It's mind blowing, really. Just last weekend we spent a few days in South Carolina catching up with some of my college besties. I was also able to walk around Furman University, my alma mater. Oh the memories!

We've been in Virginia for a full month now. I feel connected and more at peace in these parts. We knew all along that Portland was never "home" for us, but it's that much more apparent since landing here. I am certain that we are where we're supposed to be, and that's an amazing feeling.

PB Banana Oatmeal Bars

This is the perfect snack for a road trip, hike, or mid-day pick me up. It takes all of 25 minutes to prepare and bake. 


Ingredients:

1.5 c oats
1/4 c brown sugar
1 t baking powder
1/2 t kosher salt
1 t ground cinnamon
1 t vanilla extract
1/2 c milk
1 large egg, lightly beaten
1 large mashed banana
1/4 c creamy peanut butter

1. Mix the oats, brown sugar, baking powder, salt, and cinnamon.
2. Add the vanilla, milk, and egg.
3. Add the mashed banana and peanut butter. Mix well.
4. Pour the mixture into an 8x8 dish. Bake at 350F degrees for 20 minutes. Cut into squares and enjoy!

Georgia to Maine


A family friend has be thru-hiking the Appalachian Trail since March. We've been living vicariously through Tim via his blog, The Man in My Shoes. He completed the final push up Mount Katahdin just yesterday. Congrats, Walker! (That's his trail name.)

Waverly Farms








We spent the day at Waverly Farms, a 250 acre chunk of land in Burkeville, Virginia. It belongs to a good friend's family. We met up for lunch, a tour, and horseback ride. Y'all, these folks do everything -- goats, pigs, cattle, veggies, berries, and poultry. My head is still spinning! We came home with tons of green goodies and eggs. Can't wait to bake and cook over the weekend!

While August symbolizes an end, I see it as a beginning since we're just getting started with our new life in Charlottesville. I'm excited about taking advantage of these last few weeks of summer but also anxious to find work and a routine. You know (or should, by now) how much I appreciate a schedule. Here's to hoping some things fall into place soon!
