Cook's Illustrated Berry Cobbler

This dessert goes very well with 70 degree weather. That's why we made it for two special occasions over the weekend.





Filling ingredients:
1/2 c sugar
1 T cornstarch
pinch cinnamon
pinch salt
3-4 c blueberries (or any other type of berry)
1 1/2 t lemon zest plus 1 T juice

Biscuit topping ingredients:
1 c flour
1/4 c plus 2 t sugar
2 T cornmeal
2 t baking powder
1/4 t baking soda
1/4 t salt
1/3 c buttermilk (or milk)
4 T butter, melted
1/2 t vanilla
1/8 t cinnamon

For the filling:
1. Preheat oven to 375.
2. Whisk sugar, cornstarch, cinnamon, and salt together in large bowl.
3. Add berries and mix gently until evenly coated; add lemon zest and juice and mix to combine.
4. Transfer berry mixture to a dutch oven and spread evenly. Bake until filling is hot and bubbling around edges, about 25 minutes.

For the biscuit topping:
1. Whisk flour, 1/4 c sugar, cornmeal, baking power, baking soda, and salt together in a large bowl.
2. Whisk milk, melted butter, and vanilla together in small bowl.
3. In another small bowl, combine remaining 2 t sugar with cinnamon.
4. One minute before berries comes out of oven, add wet ingredients to dry and stir.

To assemble and bake:
1. Remove berries from the oven.
2. Preheat oven to 425.
3. Divide dough into 8 equal pieces and place them on hot filling, spacing them at least 1/2 inch apart.
4. Sprinkle each mound evenly with cinnamon sugar. Bake until filling is bubbling and biscuits are golden brown on top and cooked through, 15-18 minutes.

R&R


There's nothing like a 24 hour stomach bug to make you truly appreciate good health! I was down and out Sunday and most of yesterday. No need for details, but it was far from pretty. I pride myself on rarely getting sick, so I suppose it was only a matter of time.

I had been planning a spring cleanse of sorts. You know, something that removes all allergens from your diet. I think I've got that covered after last weekend. Instead, I'll incorporate a probiotic and start clean!

I'm trying to use this week to rest and recuperate. The weather has been surprisingly gorgeous, so I'd like to focus on taking long walks and getting plenty of fresh air, sleep and water.

Tim Hetherington



I just finished Which Way Is the Front Line From Here? -- a documentary about the life and work of photojournalist, Tim Hetherington. His compassion and unique perspective is brilliantly captured in this film. I was left feeling so inspired by Tim's words, mission, and photographs. He was very curious about the human experience. Because of this genuine interest, he was able to instantly connect with people on an emotional level. The camera came next.

Sunset Beach




Brett and I drove to the coast on Saturday. The weather wasn't great, but we managed to snap some photos on the beach and squeeze in a short trail run. How awesome are these kite boarders? The water had to be freezing, but they were having the most fun!

I haven't had a lazy morning like this in weeks. I slept in until 7:30, finished a PBS documentary series, started my new book, and caught up on podcasts. It's your typical gray, rainy Portland day. It feels so nice. Wishing you a wonderful weekend!

New Music Tuesdays

30 Day Challenge


I've thought of two new habits I'd like to take on this month. First, I plan to do some form of physical activity every day. I'm not talking about spending hours at the gym. Instead I'd like to mix it up on skis, pavement, two wheels, or even on the floors of my house. Thank goodness for Yoga Today!

Second, I'd like to find 15 minutes a day to read. Sounds simple, I know. But with the recent return of Game of Thrones, as well as access to Netflix, it can be difficult to set the computer aside.

So there you have it! Powering down as we speak so I can finally finish my book.
